Have the fish and shellfish cleaned by the fishmonger; cut the fish into pieces suitable for the skewers.
Wash the courgette and slice it for the skewers. Wash the lemon, cut it into wedges and slices.
One by one, add onto the skewers: a prawn tail, a slice of courgette, a piece of squid, a slice of lemon, a morsel of sole, another slice of lemon and so on.
Grease each skewer with a drop of oil, and put them to cook on the grill (or oven grill) for about ten minutes. Adding a pinch of salt at the end.
