Chop zucchini and carrots into small cubes, cook for 10 min in a non-stick frying pan with a little bit of oil and a clove of garlic. Cut the tomatoes in half, add them to the pan with the shrimp and cook for another 5 minutes.
In a saucepan, cook the spelt in salted water and when ready pour it into the pan with shrimps and vegetables.
Toss over high heat and add 2 tablespoons of soy sauce. Serve hot.
