Tuna carpaccio with coriander

  • 250 grams of thinly sliced ​​fresh tuna
  • juice of 2 lemons
  • 2 tablespoons of extra virgin olive oil
  • fresh coriander
  • 1 stick of celery, julienned
  • 100 g of plum tomatoes
  • black olives
  • salt, pepper


Bring a pot of water to a boil with an onion, a carrot and 2 bay leaves in it.

Gut and scale the seabream, wash it under running water and put it in the boiling water. Cook for about 10 minutes, then remove it and wait for it to cool.

Once cooled, remove the skin and carefully remove the bones. After that, put all the sea bream fillets in a bowl, add the oil and mix with

force with a whisk, add finely chopped parsley and garlic.

Continue stirring until you have a smooth and soft mixture.


Season with salt and pepper and serve on warm croutons.
